I have access to a larger format printer (up to 42" wide rolls) and I have made some maps about 6' x 8' and one about 10x 12, but I've never made anything quite that big.
I have taken screen shots of large maps in multiple sections and printed them out on 8.5 x 11 sheets and then arranged them and spray mounted them onto cardboard. It's the little things, really.

Roll the ends up like a scroll and only show the part of the map that fits on the floor/gaming table. As the PCs explore in one direction, roll up one side and unroll that much of the other side.
