real quick question here: does the Energy Sustitution feat from Tome and Blood allow me to modify any spell that has an energy descriptor to another energy type (ie: lightning bolt to fire bolt) or do i pick just one spell and that is the spell i can do the subsitution on?

You do not have to pick a single spell, but you do have to pick a single energy type. For example, if you choose Energy Substitution [Fire], you can convert any spell with an energy descriptor to deal fire damage instead. Once you have taken the feat, it can be applied to any applicable spell without restriction.

Hehe - i'm using it for a mage who is heavy into fire, so it's going to be Energy Sub [Fire]. I just wanted to make sure i was using it right after seeing some of the spell modification feats that allow you to change the damage type for a spell, but you can only use it one spell that you select when you take the feat.
