I knew a Professor who ran a course in ' How to Make Beer'

He was a Chemist who had specialised in Zymotology (sp) which is apparently the study of fermentation...

'Zymurgy' or possibly 'zymology'.

I had classmates (from when I was an Engineering student) who took entire majors in making beer. Zymurgy is a whole department in the School of Food Technology at the University of New South Wales. And brewing beer is a large-scale industrial enterprise employing many specialist engineers.

[obD&D] But the only member of the UNSW Role-Players' Association in my epoch who did a degree in Food Technology has spent his professional career baking biscuits, not brewing beer.
