Regarding Quasqueton's question, what exactly is being scryed? I would say it depends on the details. If you have, say, a spell that locates someone by the unique ring they wear and lets you see them, then you only see their corpse with the ring on it. If you have something that specifically says the person is the target AND allows you to see into the plane that they're on (which is more of a requirement than just allowing you to see other planes, because some planes that belong to deities, particularly in the FR settings, may not allow scrying at the patron's whim), then you should be able to see their soul.

You can see and hear some creature, which may be at any distance.

Scry only works on cretures and not objects. Without checking the rules on bags of holding and the like, I do believe that they do not hold creatures since they don't hold air of nay substantial quantity. I could be wrong though but attempting to find out what is inside a bag of holding using scry shouldn't work if it only contains items.

Yes. Checked the rules and a creature can survive in a bag of holding for up to 10 minutes.

But you have to know (and have some sort of connection to) the creature you are attempting to scry on. So using scry to see what is inside a bag aof holding is pretty much a moot point, IMO. The effect is only 10ft surrounding the sensor so it would also come down to how much space is actually inside the bag after you placed your familiar inside the bag in order to scry on it.

The creature runs out of air in 10 min. Put something with an Iridescent Ioun Stone and well they can stay in there as long as they want.

I've often thought about having an assassin sneak out from under the characters noses by hiding in a bag of holding (under a non-magic aura) and having them toss him out with the trash. It will bug them to no end when they finally figure out THEY let the assassin go :p
