Steamforged Games would say Watcher (Discount Witcher from their Animal Adventures line. They even got a discount Dog Geralt).

Ranger makes sense too with some features.

Fighter with eldritch knight seems to cover all of the spell and fighting needs. Use a background to get the survival esque skills he needs. What is that really missing?

I like the Living crucible subclass for fighters from Grim Hollow. They drink potions to temporarily enhance themselves. Take that and monster Hunter ranger would be my choice.

I would put him in the level 12-15 range no lower than 8-10.
