That is just something I always wondered, But I really like this show. I got to sit in on a Ghost Hunter panel at WizardCon in Philly. It was hosted by Steve and Tango (who didn't speak much). I was too shy to ask any questions, but they basically just answered peoples questions and people came up with talked with them about their own personal experiences and pictures they took of supposed ghosts...

The night investigations are mainly for convenience and editing reasons since its easier to film at some of those locations during the night since you don't have to worry about the time of day something was filmed when editing if the sun isn't included in the lighting. It also reduces the amount of possible outside interference that a daytime shoot might attract at any given location.

As for turning off the lights, I can only think of three reasons to do it:
1) It minimizes light contamination (for thermal and optical reasons).
2) Reduces the amount of light that would be needed to film on location.
3) It creates a spooky atmosphere and makes the "camera didn't pick it up" phycological defense for the paranormal more plausible.
