Although not a slave race persay, the githyanki make extensive use of domesticated spectrall hounds which they use for tracking across the astral plane.
I'd think with the extensie presence of arcane magic (and perhaps psionics) in Githyanki military and society there would be extensive use of golems and other magical constructs, especially since these don't need healing magics. Perhaps in their planar traveling they have come upon the knowledge to make warforged.
The githyanki as a race without divine spellcasters are in a dire need of easily available healing magics, even with bards and ghustil. The xag-ya energon (positive energy outsider with a healing tendril ability) might make for an ideal servant if it could somehow be contained. Other creatures with healing abilities (divine or psionic) might make for desireable slaves and servants also.
A source for low-level flunkies might be trade with red dragon allies. Kobold or goblin slaves might make for an easily expendable work force. Githzerai slaves taken from raids might take the lowliest of slave roles, like mine-testers or quarry slaves. That is, if the githyanki can get over their hatred long enough not to kill the 'zerai on the spot.
