Orcus becomes the new CE power of undeath, supplementing Nerull and Vecna. (Or you can keep Vecna. Orcus can command him around later). Grummush, after killing the goblin, elf and most other monster pantheons, settles for NE and becomes not only the god of Orcs, but most gobliniods and ogres too.

Orcus and Grummush settle on a pact, Orcus gets 1/3 of his worshipers, and Orcus ensures a 1,000 year long armistice which includes sending out demons and undead to help Grummush in his next fight, Pelor. (Orcus figures he can't take Pelor YET but hey in a long fight, anything possible.)
 


Assuming as the OP mused most of the Triune were killed with Corellon (yay! :))
Then Moonbow is a good choice to lead what's left of the Elven pantheon.(missed a few :()

I would definitely suggest that the the elves go collectively ape-;);););) as a result of the deaths of Corellon and those other goddesses. Launching a genocidal anti-orc war sounds nice. But try something unique rather than making it one sided.

Everybody knows orcs are endless, there's always more, so play it up. The orcs everyone sees are just the tip of an iceberg. Outcaste trouble-makers following a less controlled barbaric member of the Orc pantheon that are shunned by the rest of Orc culture. Which is still barbaric and militant but also somewhat more disciplined than Grummsh seems to exemplify. Have the elves begin their epic campaign of genocide and actually manage to rouse the rest of the orcs. Only as the truly endless hordes of orcs from the main civilization the others were just outriders of pour up from the underdark and out of the most inhospitable unpeopled wastes does anyone realize what they've done. Look to the Eastern Front of WW2 for inspiration. The elves are skilled, intelligent, tactically brilliant with individually better weapons. But the orcs are brutish, ruthless, and absolutely endless in numbers. For every one the elves kill it seems a dozen more pop up. There was a saying about the Eastern Front "as long as we have more bodies than you have bullets" that's a good starting point.
