D&D General Halfling Fighter/Thief build advice

I recently started recreating very old characters that I had played in the past and one of them is Figgen, a Halfling Fighter/Thief. I have a pretty solid idea for the first half. I want to take his first level in Rogue, then go Fighter Champion until level 12 (Rogue 1/Fighter 11) to get the second Extra Attack.

His stats after his Background is Str 13 Dex 17 Con 14 Int 12 Wis 12 Cha 8.

For Feats I was going to go with Dual Wielder, then Defensive Duelist. After that I was thinking Skulker, Sentinel or Mage Slayer. Not sure so I would be happy to hear suggestions there.

Really what I came here for is what to do at high levels I was thinking of taking 2 more levels of Rogue to get the Thief subclass, then back to Fighter to level 18 (Rogue 3/Fighter 15). From here both classes' next level give me a Ability Score Improvement. Am I right in thinking that I can use it for an Epic Boon? I would probably go with Fighter 16 first. Then I could go with Rogue 4 for another feat (another Epic Boon?) or I could take an extra level of Fighter for a second Action Surge and Indomitable. Alternatively I could also make it to Rogue 5, but I'm not sure if Cunning Strike, Uncanny Dodge and another d6 of Sneak Attack is worth it.

I would like to play this character in the next game I play, however I know it is unlikely that I will actually get high enough level to matter, but I like to have it figured out just in case.

Taking your first level in Fighter rather than Rogue would get you 2 extra hit points and more fighter features. Given that Figgen will have more levels in Fighter than in Rogue this seems like a good idea. I would take the Wayfarer (what 2014 called Urchin) Background so that he has more Rogue skills at Level 1, also with both the Lucky Feat (from Wayfarer) and Halflings Species Luck you benefit from both.
