We just did this.

Had to transport an unconscious puma animal companion on a horse.

We used DC 25.

Random Encounters: Wild Life - Tricks and Training for D&D Animals for additional tricks, feats, handle animal stuff.
Random Encounters: Wild Life - Animal Companions for Any Character for the Wild Cohort feat to get an animal companion, without being the Druid or Ranger class.
Random Encounters: Wild Life has more neat stuff for mounts.

Complete Adventurer page 100 has more Handle Animal tricks and stuff.
