Adding some "residual equipment" to improve AC is not bad, but remember it should count as part of the treasure for the encounter.

Voadam has it right, actually. Any reasonably intelligent (in most sources defined as Int 3+) can take class levels, even if it normally advances by Hit Dice. That is why creatures like mummies or unicorns can have class levels and we get mummy lords and celestial chargers (both clerics) in the MM/SRD. Natural advancement by size does not prevent advancement by class.
