Turning might work but is there a range for turn Undead??

Flying: Mord's Disjunction/Greater Dispelling. Control Winds is also a nice way to bring a flyer down.

Turning is generally line of site.

From what I know this will be whats left of him in antimagic field......

AC30or56 if insight bonus work in antimagic.

Simple! First cast antimagic field, then shapechange into something that flies. :D

Seriously, just get yourself a winged mount. By the level at which you're up to facing this guy, you can buy a trained pegasus with your pocket change.
