Steverooo... I don't get it.

You come and ask for advice, and when plenty of people want to give it, but need more info, you refuse to give any details. Sure *you* think it doesn't matter, but if you only wanted your own advice, this thread is a waste of time. The people you are asking need more info in order to give decent advice. If you want the advice, you need to provide the info.

What class are you? What Str? What armor/shield/weapon do you have? What bulky/heavy equipment do you have?

Refuse to adventure places where you'd risk losing your pack animals, hire an animal handler to manage such in combat, and maybe a guard for the handler. If your GM still refuses to let these things go, let HIM go. He's asking you to take it easy on him, but he's not being particularly easy on you if you're on ENWorld enlisting the legions of gamer l33t to manage your backpack. Personally though, I think I'd just stay closer to home or start taking levels in Ranger so I could 'rough it'. You know, just you and your bowie knife against the orcs eating worms without a fire at night. You could ask your GM what AC a Tarzan loincloth might be, and you'd still have room to carry back loot to pay for MAGIC bowie knives once you're high level.
 

My $0.02 - the GM is being unnecessarily obstructive.

Animals which aren't combat trained will run away in combat. That's it. If a combat-trained animal is not being controlled, it will still not run away.

If there's a ranger in the party or an animal trainer available, it will not take THAT long or cost THAT much to train the pack animals for combat. Assuming you're travelling 8 hours a day, I think it's also possible to train an animal on the go (3 hour training session per day). Ask the GM if it would be easier to simply train them not to flee in combat, rather than to actually fight. (There's no such trick listed in the PHB, but I figure "battle hardened" would be DC 15 rather than the DC 20 to actually train an animal to fight.) It may not even be necessary for mules.

Steveroo, you said that even if you had a pack horse, the pack would still encumber him. Encumber who, the horse or the PC? You obviously should not be thinking of your character walking around with pots and extra stuff on his back and remaining unencumbered. :)
