Protection From Evil is a useful spell at low levels. Its two main advantages are the AC bonus, and the protection from mental control (though that last is somewhat limited).

By the time you reach 6th level, odds are you'll have a Protection ring, which will make half the spell obsolete, since its AC bonus doesn't stack with the ring.

I'd almost do it in the reverse order, in fact, Protection from Evil at lower levels, then swap it out after you get the ring.

This train of thought brings me to wonder though, what do you plan to use for Armor Class at lower levels, before you find/can afford a set of Bracers?

You didn't say it, but based on your post I'm pretty sure you are talking about a 3.5 character rather than a 3.0. My references below are all 3.5.

I realize you are going to mix classes, related to your sorcerer levels, I have some favorite feats that I feel are always worth considering for spellcasters.

Obviously some of these can be taken by anyone, but I like these for wizards/sorcerers.

• Empower Spell PH93
• Quicken Spell PH98
• Spell Penetration PH100
• Greater Spell Penetration PH94
• Great Fortitude PH94
• Iron Will PH97
• Spell Focus (Transmutation or other schools likely to be used against you) PH100
• Greater Spell Focus (Transmutation or other schools likely to be used against you) PH94
• Improved Counterspell PH95
