Hmmm...help, please?

I had a dungeon set up for about 5-6 level 1 PC's. However, only 3 can make it to my game. I DO have, however, a level four Servant of Pelor to help them out, in case of emergencies. Basically, they are going up against about 12 human skeletons, 2 bugbear zombies, 5 human zombies, 2 ghasts, 3 ghouls, and the boss (a skeleton champion...based off of CR 3 skeleton).

I think they will be okay...but what about you guys? Should I splice some of the numbers down? I don't want it to be a small little dungeon where they complete the quest in about a half an hour.

Sounds like you just need a resting point in the middle. What if inside the dungeon there's an area (of interest to evil but not accessible to them) that is a small shrine to an obscure angel / god of water? Literally a healing fountain. Faintly glowing runes in the ground appear to be part of a big "magic circle against evil" as the giveaway that the fountain is OK.
 

Is your game today or tomorrow? If it's late today (like, you have 3 hours or so) there's Gorgoldand's gauntlet as a GREAT 1st adventure. I've used it thrice, it's available somewhere for free online... search-fu on these boards can probably dredge up a link. Just don't attack with the Merrow, that's all.
 

Or another idea is to suggest that the party pick up a few NPC mercenaries of similar level back at the tavern. Or run the missing players as NPCs.

I thought about doing that...except today they are all rolling up their characters. Haha.

Thanks for help. Any more suggestions? (I'm looking up Gorgoldand's gauntlet as we speak.)

My first thought as well.

You could have him be a contact in the town, to go back to for healing.

However, to work with the "rest area" idea, perhaps you could have him chained and gagged, or unconscious, in the middle of the dungeon. That way, when the players get to him, he can heal and buff, and get back to wherever he came from, possibly to be a recurring NPC.
 

I would agree that the NPC is too high to "come with" if he's not supposed to be the star (the PCs should always be the stars).
