There's probably a better answer, but just because someone/something doesn't have the skill doesn't stop them from using it (unless it's Trained only). The horse could use the skill trained.

There might be something with the Ride check that helps with jumping too.

From the description of the Ride skill:
Leap: The character can get a mount to leap obstacles as part of its movement. Use the character's Ride skill modifier or the mount's Jump skill modifier (whichever is lower) to see how far the mount can jump. The DC (15) is what the character needs to roll to stay on the mount when it leaps.
A heavy warhorse has Str 18, so its default Jump modifier is +4. If it's wearing barding, the armor check modifier applies.

You mean they don't have ranks in the Jump skill. They can still use the Jump skill untrained, just like a character with no ranks in the Jump skill. The Jump uses the horse's Jump skill modifier or the rider's Ride skill modifier, whicheve is lower.
