I haven't DMed since the early days of 3.5e, but over time I've collected a number of House Rules that I like. When I get a new game going, I'll probably incorporate them.

My current group is strictly by the book -- so much so that they think Prestige Classes are weird and useless.

I get harassed every game session because I run a Cleric5/Divine Oracle3/Ranger2. They think I shortchanged the party because I'm the only cleric and I can't fight undead that well and don't have level-appropriate spells. ... Sigh ...

For my homebrew setting I have a large list of houserules for altered classes and feats and spells, in order to maintain and promote the integrity of the setting.

For Greyhawk or the Forgotten Realms I use the rules by the book.

I use house rules to make the game fit my campaign, and to make sense out of rules I don't get. As an example of the first, I don't give out lots of magical armor, so I give PCs a defense bonus equal to half their BAB. As an example of the latter, I haven't heard a reasonable explanation as to why some combat maneuvers, like disarm, invoke an Attack of Opportunity. So I don't use that rule.

Odhanan, I've been following your campaign for a while now and it's probably the best, most entertaining series I've read for a long time. And I'm very jealous of the excellent food too :)

When's the next one going to be up?

I try to keep them as light as possible. Like to keep the quantity small enough that players will reasonably know them.

Same here.

Some other house rules regarding races and classes to "fit the setting more" not becasue they are considered over or underpowered though.

No clear option in the poll for this one though.

I used to houserule like crazy.

Then I discovered that the reason I houseruled like crazy was because I was trying to fit a square peg (D&D) into a round hole (something in a genre I didn't despise). So I found other systems and other implementations of the d20 rules and haven't had to do nearly as much houseruling.
