Medium Rare with a good sear. The thickness of the cut may affect this and make me have to select Medium, so as not to get a steak thats too rare in the very middle.
I can't eat steak anymore because of an issue with my esophagus (it's a choking hazard), but when I could, it was medium. I used to order it medium-rare because I thought that was just how it was done and I didn't want to be gauche, but finally decided I just prefer it fully cooked through and am to old to worry about whether I am eating it "right" or not.
