How does eyebite work?

My PHB reads: "Each round, a gaze attack automatically works against one creature within range that is looking at (...) the gazing creature."

I was wondering if you get to choose between eligible creatures, but I couldn't figure it out from the spell description. So then I checked gaze attacks in the DMG and MM, and read: "Each opponent within range of a gaze attack must attempt a saving throw each round..."

What's the official answer to this question? Is it because my PHB is first printing?

Also, if it really is just a single target that gets affected, how do mirrors work in all this? The spell description says you can be affected by your reflection, but can't you just choose to affect someone else than yourself if you just have a single target to choose? In other words, the only danger would be to cast eyebite while you're by your lonesome, and walk up to a mirror like a dolt?
