For the original question, I guess it depends on how you view the Ettin. Is it possible for him to argue with himself and can both heads have their own personalities? If so, I'd say that Ettins are rather like conjoined twins and therefore two seperate sentient being and have two souls.

I'm playing a two-headed mutant barbarian in a PbEM, and I'm running him as twin brothers - they occasionally argue over who gets control of the legs, one of them likes to get drunk and the other has to live with it, that sort of thing. Lots of fun.

But I was mainly wondering what happens if an Ettin Wizard casts Magic Jar...
