If they're high, I've got an EPIC Pseudonatural Gelatinous Cube that I stat'd up for my high-level game. :]

I'm going to second the suggestion of an oozemaster, and throw out the idea of a thrall of Juiblex as well. :) And there are tons of cool oozes, especially if you have MM3- arcane ooze, conflagration ooze, etc. Good stuff.

If you play with minis and you've been fortunate enough to get a gelatinous cube, you should try to use it, though. :)

Or you could go with the classic trick of making an ooze out of jello...I've done it, and it's lots of fun. Keep a bunch on hand if you're doing this though, because if a PC is sucked into the ooze and then escapes, digging the mini out of the jello destroys the shape. Just give the escaping pc's player the jello to eat (as a reward for getting out :P ) and then put a new jello cube on the battlemat.
 



I should note that not everything in the dungeon should have Acid attacks.

PCs, depending on level, would just slap Acid resisting spells, and bam, there goes the threat of your dungeon. ;)

This is why monsters who are Slimey but have multiple avenues of threat are good.
