There's also a spell that gives you an armor bonus that applies to incorporeal touch attacks.

Add fighting defensively to the Combat Expertise option. Tumble. A defending weapon grants a bonus to AC that stacks with all others. I think that might apply to touch attacks?
 

From Tome of Magic, the binder's pact augmentation class ability allows them to gain an insight bonus to most things, including AC.

You can switch each day what you get the bonus to, but my character has been very happy having it in AC (you get +1 at 2nd level, and I think it goes up to +5 at 20th level).

This reminded me. You could take a level in Battle Dancer, the chaotic pseudo-monk from Dragon Compendium #1, which adds charisma bonus to AC when unarmored and unencumbered.
