Does anyone know where the name Ioun comes from?
Is there a history behind the stones?

Where can I find more on them than their stats?

Ioun stones are from the Dying Earth series from Jack Vance. As a matter of fact, the article in "The Dragon" that first introduced them to D&D was called "Vancian Magic Items" IIRC.

I heard rumors that our Col_Pladoh was a big fan of Vance, and apparently a small part of the D&D rules was based on some of his works

Yeppers- Glyfair hit it on both accounts. Hence why some people (mainly 1e peeps of which I am one) refer to the D&D spell memorization system as "Vancian Magic."

Well considering

Gygax
Xagyg

Jim Ward
Drawmij

Vance
Vecna

follows the pattern.

I think there are others but I can't think of them right now.
