Various accounts of executions by axe or sword rate them as being far from quick. Often multiple secondary attempts were required. There however other references to headsmen being required by law to deal a fatal blow within three strokes (and one as high as 10 strokes).
Wikipedia states that the head executioner of france at the time of the introduction of the guillotine recommended it because execution by sword or axe was "cruel and uncertain". That particular quote is, unfortunately, not referenced.
Now - this is to a normal, non adventuring person.
I don't find it crazy to say that a CdG in a non-ideal environment (ie - NOT with a weapon specifically made for executions, and NOT with the victim's neck on a block) should not necessarily be an instant kill on even a human, let alone all the other crazy creatures that exist.
Also - it's just more fun.
