Is it evil to eat intelligent monsters?

I tend to agree that morally, as long as you didnt kill the thing for an evil reason or in an evil way (that is to say, if it was already dead or you killed it in self defense) then morally eating its dead body is irrelevent.

However, aqquiring a taste for a non-evil sentient species and killing them for that reason would be murder and therefore evil.
