I am going to be playing a Githzerai Monk and there are 3 At-Wills I like, and its hard to settle on just 2 of them. Thought there might be a way to get a 3rd that I wasn't thinking of. Even if its a magic item that allows it, that'd be a start...

Not really. However if you'll be satisfied with a per encounter version of a blast, you could nab an invoker at-will as an encounter power (Astral Wind or Visions of Blood). Acolyte of Divine Secrets isn't a bad multiclass anyway since it opens the door for Radiant Fist with Religion Training, and lets you use a Staff of Ruin if you want.

Not directly that I'm aware of. At least not through normal means. (I sometimes joke that my human warlord has five at wills; his basic three (Brash Assault, Direct the Strike, Commander's Strike), his Melee Basic Attack (for when none of the above are suitable), and a feat that gives him an at will option on a charge - he flattens on a hit and takes an AoO on a miss).

Which three? (I'd advise a burst or blast vs reflex and something vs fortitude).

On top of my head, Reincarnate Champion cheese... but you won't be able to have your new shiny at-will 'till level 24 or so, so I don't think it's what you're looking for.
(Grab a primal MC feat, grab Reincarnate Champion as your Epic Destiny of choice, choose Revenant as one of your past races, grab Half Elf soul, grab Versatile Master. The third at-will won't be from your class, though ).

Retraining. Sure, you never really have three different at-wills at once, but you can switch one out each level for the sake of variety. It's not quite the same thing, but it still gives you the fun of exploring three at-wills.

Small detail, Paragon Multiclassing only allows you to swap one of your current at-wills for one from your new class, it doesn't give you a third one.
