What an incredibly difficult choice!

I went for:

Kobolds - Perfect early level antagonists with some staying power at higher levels due to mischief and coordination. Also: kobolds. Win.

Gelatinous Cube - A one trick pony, but WHAT A trick. Also low enough level to see a lot of play. Bonus points for being a D&D classic.

Umber Hulk - One of the weirdest of the Monster Manual monsters that really shakes up players who have become complacent.
