In Phantom Menace when the droids first show up, Obi-Wan and Qui-Gon immediately line up and start deflecting blaster shots. They don't miss a beat. Deflecting blasters is SOP for a jedi.
 

To the OP's question: We don't see a Jedi do a deflect blaster until RotJ, yes. As I am sure you know, though, players want to do the "cool stuff" right away. So waiting on that is probably not the best idea. I think that's why the RPG lets the characters do some cool things right at first level.

As to Jedi in the movies: I don't think the prequels were as good as the original but I still like them and the way they portray Jedi is why. The fight scenes in the prequels look and feel more like people "in tune with the Force" than the first trilogy. Of course, since Luke received some very unusual training for Jedi, it's not surprising that those fights look different. (Not to mention the differences in film making and action scenes between the movies.) And I think Darth Vader took it easy on Luke knowing who he was.

Besides, Yoda kicked Dooku's bum! :)
