For the normal weapons in the tentacles, how about mostly Medium katanas with a couple Large or Huge swords?
OK, so the attack lines would be slams plus (tentacles or katanas)? Sure. Then the combat section can list that they may use Large or Huge weapons in the tentacles instead. Should there be a limitation on weapons that they can use with tentacles, like no larger than Huge or must be one-handed weapons?

Yes, that sounds fine. How about something like this?
Tentacle Weapon Use (Ex): A krakentua may use a Medium or smaller two-handed weapon, a Large or smaller one-handed weapon, or a Huge or smaller light weapon in each tentacle without penalty. A krakentua that uses a larger weapon in a tentacle is subject to a cumulative -2 penalty applies on attack rolls for each size category of difference between the weapon and the above sizes listed as per the Inappropriately Sized Weapons rule.
To be really explicit, should we add a line "A krakentua cannot wield weapons of a larger sizes in its tentacles." to the end of the first paragraph? Otherwise, looks good!
