Any epic life shaped items out there?

Psionic Artifacts of Athas.

What other settings have used something similar to Lifeshaping in an RPG?

Biotech is common, but I don't think I've seen settings with such a wide range of items as Windriders of the Jagged Cliffs.

Note that a lot of the Windriders items are simply "organic", discarded or dead objects that had been produced by living things (very common in any sci-fi setting). But then there's independent creatures, too, which seems limited to Windriders of the Jagged Cliffs.

It seems like an underdeveloped idea in fantasy settings. I wish there was more content for it in the game...

There's a bunch of this kind of stuff in Chaositech from Malhavoc. And there were grafts and symbionts, which had a similar function in the 3e Fiend Folio, and various bits and pieces in other books. See also this thread, which summarises a bunch of this material:

When I was a wee, small lad, before Dark Sun came out, I had a homebrew race called the Vaimeyen who used a mental power to alter creatures and make their own biotech. Damned if I know what happened to my notes, but it can be done. They had armour made from sets of custom grown parasitic sea shells that were as hard as iron on the outside, cloaks that grew on their backs and could turn into either wings or manta-like fins for swimming, glandular grafts that produced venoms they could squirt at enemies to dissolve their flesh or blind them, walking clam-like luggage that followed them around...
...You know, the usual.
