Looking for good multiclass warrior-type

Dwarf Paladin/Ranger (or really Barbarian or Fighter instead of Paladin if you like) with a good Con score, and go into the Deepwarden prestige class when you can. It's from Races of Stone, but WOTC posted it for free here:

d12 hit die, 6 skill points/lev, good class skills, two good saves, full BAB, and some good abilities including Con to AC instead of Dex.

Oh, forgot to mention in the Ftr/Barb with Greatspear build (above)- you really, really, really, want to have Combat Reflexes. With good positioning, you'll get to take a larger than normal number of AoOs.

Taken to the extreme, I had a Dex-build Githyanki Monk/PsiWar who was built around a polearm & the (short-ish) feat chain that led to the Pole Fighter feat (DCv1; it lets a Monk use the selected Polearm as a Monk weapon, including and especially for FoB). Even before qualifying for that feat, the chance to do damage at range several times in a round did 3 things:

1) A lot of opponents died, either directly from the AoOs or from subsequent attacks by other PCs.

2) A lot more opponents maneuvered into less favorable tactical positions, making them easier pickings for the Monk's allies.

3) Very few opponents got close enough to the Monk to actually damage him.

A Core PC would have a lower Dex than the PC above and couldn't use the Polearm with FoB, but would still be effective.
 

I'd go for breadth: 2 levels each of Barbarian, Ranger, Scout, and Fighter. Then add an extra level to any/all of the first three you want... and advance from there as a Fighter.

Add a ranger or scout level and Swift Hunter and you qualify for Imp Skirmish goodness. 4d6extra damage against undead for example is nice.
