Making a Fencer

Check out the Style Specializations in Complete Fighter. If you put 2 proficicency points into Single Weapon style specialization you get a +2 AC bonus when fighting with a sinlge weapon. Two Weapon Style Specialization is of course also great for rapier & main-gauche style.

Swashbuckler kits in Complete Fighter and Thief are of course very appropriate, though for Inigo Montoya it is definitely fighter.

If 2.5 (Combat & Tactics) is allowed check out Weapon Mastery rules. If 1E Unearthed Arcana is allowed check out Double Specialization.

Yeah, same here. I did up a NPC Duelist, but haven't gotten a chance to play him yet.
