According to this story on the BBC's site, mammoths may have varied in colour from blond to dark brown or even black. Genes extracted from mammoth bones that have been compared to genes from living species suggest that mammoths may not all have been brown or auburn as they are often portrayed.

The real question is, what did they taste like?
Supposedly, places in Russia & whatnot have special resteraunts which have Frozen Mammoth Steaks on the menu which are commonly dug up. Might just be an urban legend, though....

EDIT: I just checked out Wikipedia, and I suppose it is just an urban myth.

However, Güyük, the 13th century Khan of the Mongols, is reputed to have sat on a throne made from mammoth ivory - now THAT's pretty cool, adn is getting yoibked for my campaign setting :D
