Edit Note: This is for 7th level, since my Transmuter is currently 6th and I'm doing research into <8HD forms.
Well, when it comes to somethuing truly mean and scary, go Treant. 29 STR, 21 CON, an AC of 20, and two slam attacks that do greatsword damage (2d6+9), you're going to be putting the hurting on something. The Double Damage Against Objects/Structures and 15' Reach is icing on the cake. And you could do this at 7th level (7 Hit Dice)! Watch out for Fire, though.
At any level, you could turn into an X-headed hydra, where X=your HD. Combined with Share Spell and a Familiar, you'll be doing better than any single Dwarven Defender at defending a location (assuming you use a certain interpretation of the Hydra's Combat Reflexes feat). You could also gain the [Fire] or [Cold] subtype for free with Pyro/Cryohydra, granting you Fire/Cold immunity. Swim speed means that they could swim, if need be. Unfortunately, it suffers from a merely mediocre strength of 19, but a great CON of 20.
Manticore gives you a decent ranged attack (6 Spikes at 1d8+2) if you don't have any other ranged firepower. Nice range on those spikes as well.
Wyverns have a nasty poison (2d6 CON damage init/sec, Fort 17 Negs), and are on par with the 8 Headed Hydra with it's full attack (6 attacks, most with better damage dice). Improved grab with it's talons allow it to make a free sting attempt after it hits with the talons and succeeds on the grapple check. However, it's CON is not so spectacular.
The general rule is to remember to Share Spell if you use polymorph on yourself.
