Mind Flayer tactics?

My most deadly encounter I have run yet for 3 edition has been:
6 Derro rogues level 5 with Light crossbows.
2 Mind flayer (rogue 5) each using a dust of disappearance.
The derro entered the room looking at the carnage and slowly started moving across it. Two of the party members ambushed the derros. And the Mindflayers ambushed them.

Yikes! The PC's are 6-7 so no Mindflayers on beholders!
BTW, I've mentioned that Mind Flayer as a high ranking member of hte Network of the Blue Salamander in Kalamar. Eventually he'll come into the mix. For now it's a regular mind flayer.
I'd like a melee minion to bash the PC's and take some heat for the mind flayer. A tank if you will. But something immune to stunning.

There are some other possibilities for some nasty mind flayer tactics:
Since you have unlimited use of plane shift, team up with some Phase Spider buddies; have lots of fun, especially if you can tap a tank and plane shift him to the ethereal, where the spiders can have a field day with him one-on-one.
Another possibility is to team up with something that has excellent grappling skills - they grapple, you suck the brain out. A charmed dire ape or girallon might do the job nicely. Again, as a variant on the above ploy, the servant grapples, then you plane shift all three of you somewhere nice for dinner.
Play up the hit and run abilities of mindflayers. After all, if I had genius 19+ intelligence *I* sure wouldn't be hanging around

A Shield Gaurdian could provide both defense and offense, and would be a controllable resource that is immune to stunning.
