I'm converting some old 3e dungeon adventures and came across a few that aren't in the MM. Are there versions of the Giant Ant or Assassin Vine or Giant Bee in any other books?

I had to convert a Giant Ant for UK3 and a Giant Bee for X2, so I'm fairly certain those aren't in an official 5e book. Not sure about 3rd party products.

The assassin vine is in Tomb of Annihilation.

As for the giant insects, I’d just use the giant wasp stats from the MM for the bee and maybe the Giant Centipede (w/o the poison) for the ant.

Monster Manual has giant wasp (CR 1/2).

Tomb of Annihilation has assassin vine (CR 3).

Tome of Beasts (Kobold Press) has giant ant (CR 2). Quests of Doom vol. 2 (Frog God Games) has a couple CR 1 giant ant varieties.

that's where I've seen the Assassin Vine - I just finished running ToA. Well, my players got tired of the endless inescapable dungeon, the endless deaths - they're an impulsive lot.
