If you read "immunity" as "unbeatable SR", how do you handle this:

Natural Cunning (Ex): Although minotaurs are not especially intelligent, they possess innate cunning and logical ability. This makes them immune to maze spells, prevents them from ever becoming lost, and enables them to track enemies. Further, they are never caught flat-footed.

But, what about the hydra?

The hydra, as written, is correct. The thing has an Intelligence score of six. There is no reason why you can't just outsmart and kill it.

Also note that a Fireball or three works wonders on a Lernean Hydra.
