One thing to note - Polearm Master reactive strike is not an opportunity attack so if he ever comes up against an NPC/Monster who is really good with a Polearm he may be surprised that they can attack him when he first comes within 10' of them.

Yes, they can also do this with a ready action as well even without the feat. Like I said it is neat, but it is not OP.

A controlled mount moves on your turn (it does not get a separate turn) but it does not use "your movement" so enemies can't make an AOO against you.
you did not used YOUR movement so that does prevents AoO, but you did moved during your turn, and Aim is prevented if you moved during your turn.

And also it goes against basic logic of aiming in general.
 

I've got a small-sized yuan-ti wizard PC in my campaign who spends most of the game fighting from peacock-back.

If she gets fresh I just magic missile her mount. One magic missile or a few arrows or cantrips renders any found familiar moot in combat, unless the player is going to seriously invest in the familiar with feats and magic items, and even then, as a DM you could argue that the magic items don't stay on the familiar when it's unsummoned.

but also don't need to Aim, because you want to be stabby in their face

You don’t need Advantage on the attack roll if at least one of your allies is within 5 feet of the target, the ally doesn’t have the Incapacitated condition, and you don’t have Disadvantage on the attack roll.

Can I aim if I'm on a stagecoach that is moving? if the target is beside the road? if the target is also on the stagecoach? How about a moving boat, say a pirate ship and I want to Aim an arrow at a demon 10' in front of my character on the same deck of the same ship?

I'd say you couldn't aim if you are controlling the vehicle/mount. The fiction doesn't hold in those situations.

After reading the rules, I think you can aim as long as you do it before whatever you are on moves on your turn.

So if at the start of your turn you immediately attack you can steady aim because at this point the boat or stagecoach has not moved on your turn. After your steady aim your move goes to 0 but you can move (or more accurately be moved).

RAW I don't think the target's location has any bearing on this.
 


Or infinite if you just carve off enough for a pot roast and then use cure wounds...
A little dark perhaps for most D&D campaigns though.
Mongols drained a bit of blood from their horses, without killing them, for their sustenance. They also produced some kind of ale from the blood too, if I recall correctly. You could also milk them, under the right circumstances... Plenty of ways to feed off of large animals without killing nor maiming them!
