Consider throwing yourself at the mercy of the DM and ask to take the standard (6 + Con Mod / Level), or if you can reroll those bad HP rolls.

You mentioned GWF...you might consider Shielding up or requesting someone else take up the mantle of "tank".

I've mentioned to the DM about taking the standard and he's fine with that, but won't let me reroll the bad ones.

After consideration, I am not going to multiclass, I'm going to stick with Fighter. If I last that long- at Level 8 I'll take the Tough feat (I used my lvl 6 ASI for CON), Level 12 I'll take the Heavy Armor Master feat.

If he's willing to let you take the standard HPs, by all means take him up on it. Even if you were to roll 10s from here on out it would take you 4 levels before you'd get back to the standard HP total.
