I would only allow level stacking for extra attack. 5th level feature only. more than 2 attacks is fighters 11+ only.
Also if two or more classes give you extra attack(like 5th level fighter/5th level paladin) you get ASI instead of 2nd extra attack.
If classes overlap in martial weapons proficiency(all) and armour proficiency,give bonus class skill per overlap.
