D&D 5E Multiclassing question, Eldritch Knight x/Wizard x

Other option - go EK 8, increase charisma to 13 with your ABI, then go either Warlock (Devil's Sight, other invocations, buff spells, an imp to give you advantage, etc), or Paladin (another fighting style, lay on hands, spells, smites). Bard and Sorcerer is also possible, but wouldn't give you much you don't already have.

Other, other option - go EK 8, increase Dexterity to 13 with your ABI, then go Rogue (sneak attack, expertise [i.e. athletics to become a great grappler], and the various rogue paths), or go ranger and pick up more spellcasting and melee combat options.

I was thinking of waiting until 13th to get the 2nd indomitable but not sure.

After thinking a bit about that level I like it actually. You will have lvl 3 spells known already and can now increase your number of slots faster and maybe get some extra utility from a school of magic and a spellbook. You will acquire lvl 4 spells one level later but that should be ok.

- 6 levels of EK / 14 of Wizard --> 2 attacks, up to 1 lvl 8 slot and all the arcane traditions.
- 12 levels of EK / 8 of Wizard --> 3 attacks, up to 1 lvl6 slot and 2 arcane traditions.

I would only go the first choice if you want to multiclass, You start as a Fighter and end as a mage with a pair of attacks, armor, action surge... The second option gives you 3 spells of more level and a pair of wizard features, but you lose some EK powers in the way and you will play mainly as a less powerful EK.

Remember if you multiclass, 3 levels of EK = 1 level of Wizard for spells slots. Arcane traditions at lvl 2, 6, 10, 14 for Wizard. Fighter gets martial archetype feature at level 3, 7, 10, 15. Extra attack lvl 5, 11. Ability scores 6, 8, 12. Indommitable lvl 9.
