"Must have" as movies in their own right, or must have in the sense that the DVD itself is particularly well-done?

The extended versions of LotR:FotR and TT fit both categories, and are must-haves for sure. :D

The director's cut of The Abyss, the Criterion edition of Armageddon, and the director's cut of Aliens are also all amazing examples of what can be added to a good movie by a good DVD release.

xmen and spidey
oh, wait... something ELSE

disney movies (toy story, emperors new groove, lion king, aladdin in oct, tons of extras)

For a change of pace, my favorite Beer Night DVDs:

Big Lebowski

any MST3K disc, but "Mitchell" is a must-have
Caddyshack
South Park: Bigger, Longer and Uncut
Office Space

Everything released by Criterion. If it has Criterion's name on it, buy it. Buy it that moment. You'll not regret it. They make very, very nice DVDs.

Let's see:

LotR all 3 extended
The Usual Suspects
Seven
Firefly dvd set
Seinfeld (when it comes out)
Pirates of the Carribean
Indiana Jones Trilogy (really 1&3)
The Sweetest Thing
Something About Mary
Sopranos dvd set
Shield dvd set
Nip/Tuck dvd set

There is a nice varied selection...
Core is right Criterion editions rock.

The great thing about just blindly purchasing Criterion discs is you end up watching GREAT movies you otherwise wouldn't have.

Wages of Fear -- holy crap what a movie. Easily one of the tensest, most suspense-filled movies I've ever seen. Yikes.
Carnival of Souls -- creeeeeeeeppppyyyyy.... weird creepy movie that sticks in your head much longer than you wish it would
Onibaba -- again with the creepy, only this time with tons of sex and violence and a big, dark hole in the ground.

Their Kurosawa editions are beyond compare. The recently released Stray Dog is a fantastic DVD, with interviews with the people involved, commentary, a booklet and a beautiful transfer. I love those guys.

For the most part, this is absolutely true. I was disappointed in their release of the Samurai trilogy starring Toshiro Mifune. Not in the movies, mind you, but in the DVDs themselves. No real extra features. Almost barebones. I was hoping for something comparable to their other releases. My favorite of the CCs I have is their edition of Rushmore. Incredible set. I also like how the Criterion Collection editions become coveted collector's items, like their editions of RoboCop, Hard Boiled, and The Killer are now.
