Yes, it's a problem with murder mystery or curse of the werewolf adventures too, when powerful healing abounds. "OK, he's not dead, and you're not cursed. Adventure solved. Hmm looks like I still have some spell slots left, and we've just had breakfast, so let's head on."
I would imagine that assassins have their methods to ensure resurrection doesn't work, or at any rate is a lot harder, otherwise they'd be out of a job.
In the Vlad Taltos series by Stephen Brust, for example, there are spells to prevent revivification, and they aren't easy to break. There's also Morganti blades, which destroy the soul - no revivification is even possible if one of those is used, though even assassins have qualms about using them.
