Oozes to me are all about their immunities (DR as opposed to a black pudding's split ability, immunity to criticals/SA, etc), they're tough (high Con), but slow (dex reduction). They're a primitive sensory organ (blindsight).
I thought it would be good to allow the destructive slime abilities, but only through the class's spell exchange system.
Initially,the slime was always active but I realised how annoying that would be, especially in equipment-focused D&D-land.
Split, constrict and engulf would have be nice to have, but I couldn't fit them in. The latter two wouldn't be that useful for a "humanoid ooze" since they're likely to be a lot smaller than a regular ooze.
The acid breath thing is basically a conversion of your own Ooze from Within rank II ability (it's also in the Thrall of Juiblex class, I notice). I just thought it should be usable more often if you wanted to expend spell energy.
All the rest of the given abilities are slowly taking on Ooze traits instead of a sudden granting of abilities. Any how, I just thought I'd explain the inclusion of what I did include.
Also, I want this class to continue spell progression because intiate of ghaunadar and the slime domain give spells to your spell list that only become useful when you can cast lvl 5 and 7 spells.

That being said, a character who enters as soon as possible will only get those spell levels after completing the apostle levels (at effective cleric casting level 11 and 15, respectively). You'd be able to get to 7th-level spells by 20th level. The immunities are too strong IMO for full casting. You
might be able to get away with 6 or 7 casting advances through the class by reducing the amount of special abilities (keeping it balanced).
One last thing is that the 7th level spell mantle of the slime lord allows the caster to become completely amorphous, and while I didn't want to emulate this ability in the class, he has it in his spell list from the required feats, so he can use a wand of it, or a scroll, at lower levels.
