would a monk/barbarian mulitclass work

Yes. Though I'm guessing your question is more specific than that? For example, the alternate ways that the classes have to figure out AC don't stack. You have to pick one or the other. Barbarians like Constitution and Dexterity for AC. Monks like Wisdom and Dexterity. Are you planning on leveling up monk higher than a few levels? Depending on your Monk build if you do, you can keep wisdom as a tertiary stat and focus on CON + DEX. STR is only really required if you go for two handed melee weapons, so if you're planning on using monk unarmed strike and monk weapons (which I would really recommend here) then you don't need STR.
