Heh. In the first 3E game I ever ran, I used a bunch of Giant Black Carnivorous Flying Squirrels, converted from 1E, led by a lycanthrope.

The monk got bitten, and ended up a were-squirrel for a few sessions...

For the exact opposite, I've designed a really really ancient Black Dragon who has Alzheimer's, all his teeth have fallen out so that his bite is all gums (1d6), and when he tries his breath weapon, he pathetically coughs out mists of acid, much in the same way an old smoker coughs...and they can hear him weezing & snoring well outside his lair

one problem for the adventurers is he's forgotten where his treasure is
 

I'm not a conniseur of pre-3e monsters, so my suggestions will not be as obscure or likely as interesting as some of the others made here . . .

First thing that comes to mind is a hollow golem with an ooze inside it.

Second thing is a vampiric ooze, but you've already used a vampiric rabbit, so that may not be useful. How about a swarm of fine sized fiendish psuedo-natural gelatenous cubes? You'll need to find out what the CR would be for a fine sized G.cube before you can apply the templates, and I think it might be a good idea to use the non-epic version of the psuedonatural template as that might be a bit much . . . .

Third, a half-fiend plant creature of some type. Not sure how that would look or work out, however.

Maybe a construct / ooze combination could be used? I invision it as a statue seemly made of some highly reflective substance (ice, obsidian, etc) that suddenly starts moving. At first it seems a construct, but it can alter its shape, has oozish features and some type of ooze style touch attack, etc. Perhaps a line of size of these - three to either side of the corridor, and they don't move until the party is in the center of the hall.

Another idea that could be fun is having the BBEG use Animate Object on various skeletons and corpses. The Cleric can attempt turning them to his heart's content - but they will not be turned. Make them NN in alignment, so the party's holy weapons will not deal extra damage to them. Giving them Construct traits would not be out of line, I note.

If you're going to go with older monsters, I've always been inordinately fond of the flail-snail. Probably just because it rhymes, or something. Or more likely, because I remember being fascinated by snails as a child, and having thoughts in the same direction...(According to my older sister, I was always eating snails out of the backyard. I find the insinuation ridiculous, as I only remember staring at them....closer...and closer...and then they were gone and I had to go find a new one to look at) ;)
