Well, considering that bones are primarily made of calcerous material, they are by definition not organic, but rather mineral, and thus not subject to the ooze's acid.

The only thing I can think to add is that when the ooze is on a glacier and motionless I would think it would be nearly invisibile, much like a gelatinous cube. Otherwise it would be pretty hard to miss and fairly easy to avoid. So it would normally need surprise to be a successful predator.

Read it's description, unless you know it's there, it is indistinguishable (sp?) from a glacier, and yes, it *is* that big. :D

If it is not in the stats, you couldn't count on it being used. Most DMs will just assume that it has the normal Hide skill check applies, despite your wording.
