I am in agreement that such information needs to be available, but that the stat block is not the place for it to go. Even an "icon" sized image is too much bloat for an already lengthy format.

My guess is they're doing it this way so that, as Klaus says, the DM can easily and quickly match icon to token.

Putting it in the stat block means they can use that stat block in as many different places as they want, and the DM will always be able to match the two (without having to reference another source for the picture.)
