If a I cast nondetection and invisibility on myself, does it stop others using see invisibility or similar divination spells to detect me? The description of this spell states that "The warded creature or object becomes difficult to detect by divination spells such as clairaudience/clairvoyance, locate object, and detect spells." What is the definition of divination spells? Does it includes all spells from divination schools or just those are used for distant scrying? How about escape detection(from Expanded Psionic Handbook)?

Yes, "such as..." gives only examples of divination/detection spells, See invisibility is such one (old name: detect invisibility).

Say if I cast invisibility and non-detection on myself, do others get only one a caster level check, or do they get a caster level check every round when I am "in sight"?
 

Only one roll for each spell, it gives you a kind of SR vs divination/detection, for bypassing SR you roll only once for the spell, you are affected or not.
