I use the NPC classes from the DMG, but I'm not really sure of the point in other NPC classes...what do you all do?

We use the ones from the DMG with house rule changes to make them back loaded so they wont be such crappy gimps at higher levels.

Adept
Starting at level 11 the adept gains a bonus feat every adept level.
He may only take Alertness, Endurance, Great Fortitude, Improved Initiative, Improved Unarmed Strike, Iron Will, Lightning Reflexes, Run, Simple Weapon Proficiency, Skill focus, Toughness or any metamagic-feat as bonus feats.

Aristocrat
Aristocrats gain bonus leadership feats, when an aristocrat reaches 6th level in aristocrat, she gets the Leadership feat as a bonus feat, and gets it again as a bonus feat every two Aristocrat levels there after.
This means a 20th level Aristocrat will have at least 7 cohorts.
It is possible for their cohorts to have cohorts of there own and so on.

Commoner
Starting at level 5 the commoner gains a bonus feat every commoner level.
He may only take Alertness, Endurance, Great Fortitude, Improved Initiative, Improved Unarmed Strike, Iron Will, Lightning Reflexes, Run, Simple Weapon Proficiency, Skill focus, and Toughness as bonus feats.

Expert
Starting at 5th level an expert gains a bonus feat, and another bonus feat every 3 expert levels after that.
He may only take Alertness, Endurance, Great Fortitude, Improved Initiative, Improved Unarmed Strike, Iron Will, Lightning Reflexes, Run, Simple Weapon Proficiency, Skill focus, and Toughness as bonus feats.

Warrior
At 10th level a warrior gains Two bonus feats, and another bonus feat every warrior level after that.
He may only take Alertness, Endurance, Great Fortitude, Improved Initiative, Improved Unarmed Strike, Iron Will, Lightning Reflexes, Mounted Combat, Point Blank Shot, Run, Simple Weapon Proficiency, Skill focus, and Toughness as bonus feats.

Like MythAndLore, I have houseruled the NPC class so they are on (near) equal footing with PC classes. Expert gets lots of bonus feats (from feats like Skill Focus, Greater Skill Focus, and others home made: for example, Routine-Minded gives you a +5 circumstance bonus on a skill you already have SF on it when you take 10). Aristocrats gets bonus feats as well (like a Psychic Warrior, at levels 1, 2, 5, 8, 11, 14, 17 and 20) and a "Speach" feature that works a little like Bardic Music (lasts less time than BM, however). I don't use Warriors (rather a level 2 fighter than a level 5 warrior) nor commoners (usually level 1 or 0 expert). I havn't totally houseruled Adepts for now, but I will as soon as I need one.

I don't have books (like Traps & Treachery or Seas of Blood) that features new NPC classes, so I don't use 'em. If I did have some, however, I'll probably tweak 'em and use 'em.

I use a lot of prestige classes as NPCs, especially prestige classes that regular players would probably never choose (like the "Corpulent" from Ambient).

The NPC classes were designed with the idea that they are NOT on an equal footing with PCs when the adventuring bussiness is concerned. These classes are very good though in what they are made for. The high level commoner though is rediculous and I never use it. The adept is also a bit silly and only under rare circumstances do I use it (mostly only with self-taught clerics). I have no problems with experts and aristocats.

The only non DMG NPC class that I am aware of is the Thug in Traps and Treachery... Are there others?

I have used the Warrior, Aristocrat, Adept and Expert NPC classes in my Sundered Sky games.... I haven't had a reason to use the Commoner class yet, but I probably will soon...

I agree with except on the commoner thing, to me it's no more ridiculous than any other npc class at high level.

I use them mostly as tribal shamans, and hedge mages.

I have no problems with experts and aristocats.
